Blueberry & Lemon Raw Slice 🍋

This Raw Slice meets many dietary requirements including, vegan, dairy free, egg free, refined sugar-free and gluten free. You can enjoy the slice with a cup of tea, on a smoothie bowl, or just eat them on their own. The Bluberry and lemon layers are super creamy and delicious!


Ingredients


Base

1 Cup Almonds

1/2 Cup Desiccated coconut

5 Tbsp dried Cranberries

2 Tbsp Coconut Oil (Melted)


Lemon Layer

3/4 Cup Cashews (Soaked overnight)

5 Tbsp Coconut Cream

1 Lemon (Zest and juice)


Blueberry Layer

3/4 Cup Cashews (Soaked overnight)

1/2 Cup Coconut Cream

1 Cup Frozen Blueberries


Method


Base

Combine Almonds, Desiccated Coconut, Dried Cranberries and Coconut Oil in a food processor or high speed blender it should form into a dough like consistency. Line a 20cm x 20cm tin with cling wrap. Press the base mixture into the tin and place into freezer.


Lemon Layer

Combine all ingredients for the Lemon Layer in a food processor or high speed blender it should form a smooth creamy thin mixture. Get the base out of the freezer, pour, spread the mixture over the base and place back in the freezer. Allow 60 minutes for the Lemon Layer to set before adding the next layer.


Blueberry Layer

Combine all ingredients for the Blueberry Layer in a food processor or high speed blender it should form a smooth creamy mixture. Get the base out of the freezer, pour, spread the mixture over the slice and return to the freezer. Allow to set completely before cutting into slices. Keep in chilled until serving.
