I have created a deliciois Raw protien slice, which is refind sugar-free, vegan and gluten free. *WARNING* may cause slight addiction lol! This slice is a perfect post gym or workout snack! Nutritious and delicious ♡
Ingredients
Base
1 scoop coconut protein powder (1/4 cup)
1 cup desiccated coconut
¼ cup buckwheat groats
3 tbsp lemon juice
Zest of a lemon
1 tsp nut butter
½ cup cashews or almonds (or a mixture)
Splash of almond mylk (any non-dairy milk works)
Icing
½ cup Desiccated Coconut
1 tsp Lemon juice
Zest of 1 Lemon
½ cup coconut cream
Instructions
Add desiccated coconut, buckwheat & nuts in a food processor, blend until the coconut is at a fine consistency (very small pieces, not quite a ground)
In a medium bowl add the ingredients out of the processor, add in protein powder and mix together.
Add in the remaining ingredients and stir until the mixture is dough like.
Press dough into a tray and place in the freezer while making icing.
In a food processer blend desiccated coconut, lemon juice, zest, and coconut cream until it is thick and creamy.
Get the base out of the freezer and spread icing on top. I add coconut chips/flakes and drizzled almond butter on as well.
Allow to set for 1-2 hours in freezer. Cut into slices.
