Christmas Chocolate Pudding 🎄

Serves: 1-2 People

This cute little chocolate pudding is perfect for dessert on Christmas Day! It is high in protein - recipe contains protein powder. I have topped my chocolate pudding with a coconut glaze and a few dried cranberries (which makes it taste even more delicious!!!).



Ingredients

Pudding

1/2 Scoop Protein Powder (20g)

1/4 Cup Gluten Free Flour (I use Buckwheat or Coconut)

1 1/2 Tbsp Raw Cacao Powder

1/4 Tsp Cinnamon

1/3 Cup Almond Milk


Glaze/Topping

3 Tbsp Cashews (Soaked overnight)

4 Tbsp Coconut Cream

1/4 Tsp Cinnamon

A few Dried Cranberries


Method


Pudding

In a microwave save bowl or large mug combine protein powder, gf flour, raw cacao powder, and cinnamon mix well. Stir in almond milk add more if needed.

Microwave for 3 minutes (1 minute intervals). Take out of bowl/mug, place on a plate and allow to cool.


Glaze/Topping

In a high speed blender or food processor blend soaked cashews, coconut cream, and cinnamon until it reaches a creamy consistency without any bits of cashew.

Pour glaze over pudding and top with cranberries.
